Lemon Garlic Shrimp Pasta
Ingredients:
- 8 oz linguine or spaghetti pasta
- 1 lb raw shrimp, peeled and deveined
- 4 cloves garlic, minced
- 3 tbsp butter
- 2 tbsp olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/2 cup chicken broth
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
Instructions:
- Cook pasta according to package instructions, then drain and set aside.
- Meanwhile, heat butter and olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute, stirring constantly.
- Add shrimp to the skillet and cook for 2-3 minutes, until pink and cooked through.
- Remove shrimp from the skillet and set aside.
- Add lemon juice, chicken broth, salt, and black pepper to the skillet. Bring to a simmer and cook for 2-3 minutes, until slightly reduced.
- Add pasta and shrimp back to the skillet and toss to combine.
- Garnish with chopped parsley and serve.
