Pasta Sauce from Scratch
Ingredients:
- 1 can (28 oz) whole peeled tomatoes
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- Salt and black pepper, to taste
Instructions:
- In a large bowl, crush the tomatoes using your hand or a fork until they are chunky.
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté until the onion is translucent and the garlic is fragrant, about 5 minutes.
- Add the tomatoes, oregano, basil, red pepper flakes, salt, and black pepper to the saucepan.
- Bring the sauce to a simmer, then reduce the heat to low and let it cook for 45-60 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.
- Remove the saucepan from the heat and let the sauce cool slightly.
- Using an immersion blender or a regular blender, blend the sauce until it is smooth.
- Serve the pasta sauce over your favorite pasta with parmesan cheese and fresh basil.
