Healthy Garlic Shrimp Spinach & Pasta
What You'll Need:
- 1 lb shrimp, peeled and deveined
- 3 cloves garlic, minced
- 2 Tbsp olive oil
- 1/4 tsp red pepper flakes (optional)
- 4 cups baby spinach
- 8 oz whole wheat pasta
- 1/4 cup Parmesan cheese, grated
- Salt and pepper to taste
Instructions:
- Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Drain and set aside.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using), and cook until fragrant, about 30 seconds.
- Add shrimp to the skillet and cook until pink, about 3-4 minutes per side.
- Stir in baby spinach and cook until wilted, about 2-3 minutes.
- Combine pasta and shrimp mixture in the skillet. Stir in Parmesan cheese and season with salt and pepper to taste.
