Mushroom Garlic Shrimp Pasta
Ingredients
- 1 pound spaghetti
- 1 pound fresh shrimp, shelled and deveined
- 3 tablespoons butter
- 1 tablespoon olive oil
- 5 cloves garlic, minced
- 1 small yellow onion, chopped
- 1 pound sliced mushrooms
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook spaghetti according to package directions, then drain and set aside.
- In a large skillet, melt butter and olive oil together over medium-high heat.
- Add garlic and onion to the skillet, and cook for two minutes.
- Add mushrooms and cook for another five minutes, until the mushrooms are soft and tender.
- Add shrimp to the skillet and cook until pink, about two to three minutes.
- Add chicken broth, heavy cream, and Parmesan cheese to the skillet and bring to a boil.
- Reduce heat to low and simmer for five minutes.
- Stir in parsley and salt and pepper to taste.
- Add pasta to the skillet and toss to coat with the sauce.
